Palm oil is the only vegetable oil with almost a 50-50 composition of saturated and unsaturated fatty acids. 

 

FUNCTION / CHARACTERISTICS:

 

  • Palm oil increases the melting point for ice cream

  • It also provides a suitable replacement for dairy fats as they help give the ice cream a thicker consistency while keeping it smooth and creamy
